How to Make It

Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound lean ground beef or turkey
  • ½ cup onion, chopped
  • ½ cup green pepper, chopped
  • 1 cup corn
  • 2 cups diced tomatoes
  • 1 (15 oz.) can pinto, kidney, or red beans, drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon chili powder (or to taste)

Preparation

In a large sauce pan, brown the ground beef or turkey with the onion and green peppers until the meat is cooked through.

Add the remaining ingredients, heat through, and serve.

Want a vegetarian option? Simply leave out the meat and you’ll still have a nutritious and tasty meal! For added flavor, top with shredded cheese and plain Greek yogurt.
